Spicy beans with bacon over potato cakes

olive oil

1 red onion

2 finely sliced garlic cloves

100 gr. diced bacon

salt

black pepper

2 tbsp. apple vinegar

1 tbsp. Worcestershire sauce

1 tsp. chilli flakes

400 gr. tomato puree

800 gr. canned white beans (strained; without the liquid)

500 gr. boiled potatoes

50 gr. butter

4 tbsp. white flour

In some olive oil over high heat in a pan fry the onion and garlic for 5 minutes. Add the bacon with some salt and black pepper and cook it until it is brown and crispy. Deglaze the pan with the apple vinegar and add the Worcestershire sauce and the chilli  flakes. After 1-2 minutes add the tomato puree and white beans. Let it simmer for 5-6 minutes.

Mash the boiled potatoes and while still hot, add the butter to melt and the flour. Stir until homogenous. Form into patties. Over high heat in a non-stick pan with some olive oil and a little butter fry the potato patties.

Serve the dish by placing the potato cakes in the plate and pour some of the beans mixture on top of it.
