Gingerbread cookies

2 medium eggs

3/4 cup soft butter

2/3 cup molasses

1/2 cup brown sugar

3 cups white flour

1 tsp baking soda

3/4 teaspoon ground cinnamon

1 tsp ground ginger

1/2 tsp ground cloves

pinch of salt

pinch of ground black pepper

Mix the wet ingredients. Mix the dry ingredients. Mix the two mixtures together and stir until homogenous. Refrigerate the dough for about 2-3 hours. Preheat your oven to 170ºC. Roll the dough with about 5mm thickness. Cut in any shape that you want. Bake in a tray lined with parchment paper for 5 minutes in the top of the oven and then for another 5 minutes in the bottom of the oven. Once baked let them cool completely on a cooling rack.
